Mahón–Menorca is made with cow’s milk from Menorca, one of the Balearic island of Spain, where climate and landscape play a key role in dairy farming. The cows graze on open pastures influenced by the sea, and this environment is reflected in the character of the milk.

After coagulation, the cheese is moulded into its characteristic square shape with rounded corners and is aged following traditional methods. During maturation, each wheel is traditionally rubbed with olive oil and paprika. This practice protects the rind, supports proper aging, and gives the cheese its characteristic color and aroma.

Mahón–Menorca is available in two main varieties. The semi-cured version is aged for a shorter period, resulting in a smooth texture and a mild, buttery flavor. The cured version is aged longer, allowing the cheese to develop a firmer structure and deeper, more pronounced savory notes.

Protected by the PDO, Mahón–Menorca guarantees local milk, island production, and traditional aging, offering two distinct profiles rooted in the same origin.
