San Simón da Costa is made with cow’s milk from northern Galicia, where dairy farms benefit from rich pastures and a humid climate. The cheese is shaped into its traditional cone with a rounded top, reflecting centuries of local cheesemaking.
After shaping, it is lightly smoked using birch wood, a traditional method that gives the cheese its characteristic aroma and golden-brown rind. The cheese is then aged for a short period, allowing the smoke to integrate with the natural sweetness of the milk without overpowering it.
The PDO protects the origin, smoking method, and traditional shape, preserving the unique identity of this Galician cheese.
