Roncal PDO

Roncal is made using raw milk from local sheep raised in the Roncal Valley, a high-altitude area in the Spanish Pyrenees. The sheep graze on natural mountain pastures, giving the milk a distinctive character shaped by the land and climate.

The cheese is aged for several months, developing a firm, compact texture and a bold, savory flavor. The rind is natural, forming during aging as part of the traditional process. The aging process is carefully monitored, following methods that have been preserved for generations.

Roncal was the first cheese in Spain to be granted a Denomination of Origin (PDO) in 1981, highlighting its historical importance and the value of its traditional production. The PDO guarantees local milk, native breeds, and artisanal cheesemaking techniques, creating a cheese that tells the story of the Pyrenean valleys, their shepherding heritage, and centuries of tradition.
