CincoQ’s is a raw sheep’s milk cheese born from Alimentias’ passion for combining tradition with innovation. Its uniqueness comes from aging in casks that once held Oloroso Sherry in our unique cellars of Jerez de la Frontera. The name CincoQ’s reflects the five elements that shape its maturation (time, temperature, air, humidity, light), each adding complexity and character to this one‑of‑a‑kind cheese.
The raw milk comes from carefully selected sheep, ensuring a true Spanish flavor. After bathing it in Oloroso, the cheese continues to mature in Sherry casks in the specially designed cellar at Finca María Paz up to 6 months. Here, temperature and humidity recreate the conditions of a traditional Jerez bodega. The result is a cheese with a firm, crystalline texture and a silky mouthfeel that reveals layers of flavor with every bite.
