Murcia al Vino is produced with fresh goat’s milk collected from farms in the Murcia region, an area with a long history of goat farming. The milk is gently transformed to preserve its natural character and creaminess.
Once the cheese is formed, it enters a key stage of its identity: during maturation, the rind is regularly washed with red wine made in the same region. This traditional practice gives the cheese its distinctive purple color and plays an important role in the development of its flavor.
The aging period is relatively short, around 45 days, allowing the paste to remain soft and creamy while keeping a clean and balanced goat’s milk profile. The PDO guarantees the origin of the milk, the local production, and the traditional washing process that defines this cheese.
